Week 8

This is the longest I've taken to update the weekly share :(  You've probably (hopefully) used up a good portion of your CSA share this week already.  A bonus: The CSA has stopped just in time for the peak of farmer's market season... hooray!  Sweet corn, tomatoes, cucumbers, peppers, and melons.  I also know some of you are growing things like tomatoes in your personal gardens.  Another way you can enjoy the abundant, sometimes overwhelming, amount of those delicious cherry tomatoes is to oven dry them into a perfect little snack.  See the recipe below!

  • Baby Mustard Greens
  • Baby Arugula
  • Cherry Tomatoes
  • Kohlrabi
  • Cippolini Onions
  • Summer Squash
  • Frying Peppers or Beans
  • Bunch Carrots
  • Garlic

 

Tomato Season

Here is a recommendation from Andrea Bemis' Dishing Up the Dirt. She calls this recipe 'Farmer's Candy'!

  • 4 cups cherry tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • pinch of fine sea salt

Preheat oven to 225 F and line two baking sheets with parchment.  Slice cherry tomatoes in half (lengthwise if they are oblong) and toss them with oil, thyme, and salt.  Arrange them cut sides up on baking sheets and bake for 4 hours, rotating the pans halfway through cooking.  The tomatoes are done when they are shriveled and dry but still retain a bit of juice.  Use them within a couple day or store them in resealable freezer bags for up to 6 months.
